First, let me just say I miss my Vox blog. I hate Typepad. For some reason it takes multiple steps to get to the point where i can compose a post. Bugs me!
So I was doing the fall cleanup in my vegetable garden on Sunday. Pulling out all the dying summer vegetables, and getting ready to plant my fall/winter veggies. I had this tomatillo plant that was just taking over like crazy. Tomatillos are bitches! I've never grown them before. They spread like crazy and take forever to produce. I have two, one near the front end of the garden that I've kept trimmed back and the one near the back of the garden that I let get out of control. So I started trimming the rear one back, and just decided to pull it out completely. Once it was gone, I discovered a forgotten row of beets that were bursting out of the ground. They are at least halfway above ground now (I usually pull them at a quarter above) and need to be harvested. So I am going to do a beet weekend. I found a recipe online from Bobby Flay for Cornmeal Crusted Chile Rellenos stuffed with beets and goat cheese, served with a grilled vegetable salad (more beets!). In my big Soup cookbook, I found a recipe for Two Day Borscht that involves day one preparing stock from beef and pork ribs, and using the shredded meat in a borscht made with beets, carrots and apples (all of which I have in abundance in my garden).
While I am cooking, I hope to enjoy watching the GIants beet the Phillies and the Niners beet the Raiders.
